Zucchini Bread

1 Tbs Vanilla
3 Lg Eggs
2 C Sugar
1 C Oil
2 C Shredded  Zucchini
3 C Flour
1 t Baking Soda
1 t Salt
1 t Baking Powder
2 T Cinnamon

Shred 2 C Zucchini, pack in a measuring cup, and freeze in baggie over night.   Take out and mix with liquid ingredients.  Sift dry ingredients and mix with moist.  Do not over beat.  Bake at 325 for 1 hour in greased and floured loaf pans.  Makes 2.
